There's a registry key called "FWLOGDIR".  Create a new directory where you want the logs to be stored, then change that registry key to the full path of the new directory.  Stop and start the FW-1 service.

A caveat:  I tried this on 1 system, it worked as expected.  I tried this on another nearly identical setup, it does not work.  However, this is the official Checkpoint way to do it, so there you go.
